See the holes? They prevent the cheese sticking to the knife which would cause drag and could lead to the slice splitting/crumbling.

Cut a slice of very mature cheddar with a kitchen knife without it breaking, or a wedge of ripe brie without it sticking.

Stickiness/density/crumbliness mainly.

Its why cheesemongers use a cheese wire to portion up larger pieces off a block/wheel etc, you'd end up with a horrible, stuck uneven slice of something if you didn't.

I remember holes in the blade being a thing for knives in the 90's but assumed it was a gimmick as you don't really see it any more.

Although saying that, I think the dimples on a santuko knife (which is what I normally use to cut cheese) are supposed to do the same thing.

We have a small range of knives for such, depending on the density and makeup of the cheese
If one has a reliable cheese thermometer then density can be easily handled with the correct selection from a much smaller range of knives (perhaps only seven).

Obviously this is dependent on whether you favour the classic German manufacturers or the recent vogue for high tensile Japanese cheese knives.

Exactly! That's what is wrong with the cheese knife I bought from Amazon. No holes.

I use a flick knife.

It's rubbish at cutting cheese really but raises a few eyebrows at dinner.

I realise the OP has already ordered a replacement and I am a bit late to the party but noticed that Victorinox do a cheese knife very similar to the one the OP was looking for. Maybe handy for next time.
