Pork chops tonight, with courgettes cooked with herbs, garlic and tomatoes in a sort of ratatoulie that i do.

I have a big bag of carrots, aside from boiling or steaming them, what could I do that is a bit more interesting?

Par boil and roast in herbs. Just half them lengthways or whole.

We make carrot chips/wedges quite a lot, just roasted in the oven with salt, pepper and a bit of garlic. They're good with sriracha mayo.

I also like them cut in half length ways, drizzled with oilve oil and a bit of honey, a sprinkle of crushed cumin seeds and a pinch of chilli flakes - then roasted.

Came here to post this. Adding some pine nuts or flaked almonds in the final 10 minutes cooking is also nice.

Yep Vichy carrots, prefer to up the star anise content compared to that recipe.
