I prefer the James Martin version which has 5 star anise, so only 25% more.

Cooked in quarter of a kilo of butter and 150gms of sugar? Then 3 tspn of salt as well?

What about carrot salad? I have one recipe.
Grate a few carrots on the wide edge of a box grater. Add some thinly sliced radishes and/or julienned fennel, if you're feeling fancy. Mix the veg with a vinaigrette of 1 teaspoon grainy mustard, 3 tablespoons lemon juice, a generous quarter-cup of olive oil, and a touch of honey, along with some toasted cumin and fennel seeds. Toss in some golden raisins and top with toasted pistachios and lots of parsley.
I often take such salad to work in my lunch box (ordered not so long on https://allinpackaging.co.uk/food-packaging/ 'cause cafeteria at work is horrible). So the recipe is simple and the flavor is delicious without being demanding.

I stumbled on this making stock for a nigella soup recipe, carrots were “ finished with” & ready for bin, but so glad I tasted...

Simple version
Simmer carrots, peeled but un chopped, for a long time until soft in water with chicken stock cubes & a healthy dose of cinnamon.
