Got a right notion for this.

I've only tasted it in wagamamas so don't have a great range of reference but looking online, Amazon there is Mr Kimchi but there are loads.

Any recommendations? Can I buy it in any supermarkets?

It is pretty easy to make yourself if you can get to an Asian supermarket, although while there you could probably just buy some.

I did enjoy making it though so I'd say give it a go, ingredients are cheap. Get some Gochujang while your at it, it's amazing!

I bought some in Sainsbury's. It was not nice!

Spent many months being indoctrinated trained by LG Electronics in South Korea - had Kimchi every day and love it. The proper stuff is buried in clay pots for years!!

Spooky, just started to try to make my own. First batch is going to be rocket fuel, overdid the chillies

On the face of it it looks dead easy to make.

Good asian supermarkets will have it. Smells like farts when you open the jar, but it has a great Umami taste.

Sainsburys do it, can't remember the brand and haven't tried it yet - but it's "organic" so surely must be FANTASTIC? biggrin

Don't touch the stuff in Sainsburys, it's horrific in my experience. Any decent Asian supermarket will stock it. I love the stuff, and the wife has it with everything. As a poster says above, they bury the 'real' stuff for many years in clay pots in the ground - and that costs a fortune to buy in Korea. Fortunately for the rest of us, they figured out how to make a passable alternative for a lot less, in a lot less time!

This is the most common brand you'll find here in the UK - it's fine...

Coincidently, yesterday I ordered some Korean noodle bowls - very hot and Kimchi flavouredyum

There are many types of kimchi, not just the cabbage stuff. If you go to a really good Korean restaurant, they'll put out a spread of at least 6-8 different types. Personally, I don't like cabbage kimchi at all, but I love cucumber kimchi!

I would agree with the recommendations to go to an Asian market. We always got ours from Seoul Food in Cambridge.

Ah, kimchi - love the stuff as well, I tend to buy it from oriental supermarkets, open the pouch/tray and put in a sealed tupperware and leave in the fridge. Of course even with the sealed plastic container, every time I open the fridge I wonder what the smell is and where it's coming from.

It's one of the many things I miss about Oriental City - both the original Japanese and the later pan-Oriental supermarkets used to sell a decent selection of fresh kimchi, often spiced for Korean tastes, not Western or Japanese.
