Bit of last minute, kids in-out-in-out-dont-want-pork-going-veggie-pita



Brine it for a few hours



Prep some veg



Sear in butter



Sort out the dauphs...



Mrs21's with added misplaced green.

Looks fab. I’m never quite sure about pork cooked slightly rare.

I love turkey.

Very different flavour to chicken. I use plenty of butter and seasoning when cooking mine.

Turkey sandwiches with plenty of mayo are lovely.

Last year made a turkey and ham pie with tarragon that went down a storm too, plus some coronation turkey. But haven't ordered as much for this Christmas.

It's not something I eat most of the year - Christmas tradition...eating very much more vegetarian stuff these days and on the odd occasion when meat's high up the menu, there aren't enough in the house to make buying a proper bird sensible. We do occasionally have the turkey ready roasts though (my boys like them).

Medium-well is the way forward. Rare pork IHO tastes really crap and well done is like pap.

This was mine. A little rarer than Mrs21 but wow, for generic supermarket pork it was good.

Rare pork used to be a no-no due to the chance of getting worms. We don't have that problem in the UK any more, so pink is good and it's now just about personal taste. I'm with you on the medium or medium well. I like a bit of a pink tinge, but wouldn't eat it rare.

You start off by saying

In what way?

Your examples after that don't just talk about the turkey but adding extra ingredients ..

(probably damning in itself, why not just eat turkey sandwiches? )

That sounds really good. But you had to add the ham and tarragon."

Is there any turkey meal that doesn't need something adding to make it tasty?

My point is the answer is no. It is dry and tasteless compared to all other meats you generally get in the UK .

Agree. Better to risk something one in a million and have a nice juicy bit of pork than forever eating dried old hog slices.

This is one of those pushing the envelope style things though against the old days.

And after what I said about turkey you can guess I think no matter how well you cook pork to stop it drying out it still doesn't have much taste. Like turkey.

I don't like animals becoming just a "filler".

Might be worth experimenting. I've never found pork or even turkey bland. Neither is a particularly strong flavour but then neither is chicken.

Good point! I did actually buy a small turkey for Thanksgiving to match my mate in the USA and will be finishing it off this weekend, and I will post all the pics then. It was about 3.7kg and done 8 meals or so including the dog.

Coronation turkey based on a Colmans cheese sauce packet? Oh yeah! Now that's experimentation.

Completely agree, turkey is poor as a meat to be savoured. Only good as a 'filler' with other ingredients.

A good brining and plenty of butter when cooking with a really good quality well fed turkey will not result in bland meat. Yes, it's not the most flavourful, but shouldn't be a poor relation to a good chicken if cooked well. :-)

Debating whether to brine our whole turkey again this year, it's 18lbs though, so might need a dustbin. :-)

we have a bin dedicated to the purpose! However doing a 3 rib roast this year
