there is a jamie oliver ultimate burger recipe (can't remember the actual name, but it's something like that) which is his idea of taking a Big Mac and improving it. Pretty awesome.

Made a Beef and Kidney casserole yesterday.........



Added the kidneys towards the end so they didn’t melt away.....







Now as we all know Stews taste better the next day I resisted the temptation and just pinched some of the gravy and spooned it onto my MIL’s home made Corned Beef and Potato pies.......



Just need to make the Horseradish Dough Boys and light the log burner and it’s Stew night tonight thumbup

Tandoori lobster a la Dan Toombs. I would have previously said this was sacrilege but no, it’s wonderful and the sweetness and flavour of the lobster is all there.

Cheesy chips

Brie

Chips out of the freezer brushed with galic and butter

All quite different, but I'd enjoy all of them!

Friday night was a homemade kebab night. Everything home made, including the fennel seed flat breads, chilli and garlic sauces. Just simple, healthy, delicious food.

Looks amazing, that. How'd you do the chicken, on griddle?

Tonights effort, really pleased how it turned out for only 10 mins prep.

Marinated in natural yoghurt, lemon juice, garlic, cumin and turmeric then threaded onto skewers and just done under a grill.

Griddle tends to make an awful mess with marinated stuff, particularly yoghurt. Grill does a great job of giving colour and keeping everything intact.

Hard to make meat and potato pie look good on a photo, but boy was it tasty.

We always use beef skirt, works perfectly.

Chaps. I'm in need of something that I can make that will be great in large batches (well, for four people).

I'm thinking something either casserole or soup like. Lots of veg, lots of flavour and great for mopping up with some nice bread.

I have a slow cooker if this helps and don't mind spending the time to prep.

The steak and kidney dish above looked great but I'm trying to reduce salt and fat intake.

Does such a thing exist? I'm thinking that MCs chilli will do the job but it takes a long time.

I'd appreciate if anyone has r files with methods too as I've never done this sort of thing before, I'm fine with smaller more targeted dishes but this is new.

Even just a point in the right direction to some good sites, BBC good food etc.

Here's a nice chicken dish I've done a couple of times:

Slow cooked beef or lamb casseroles are pretty straightforward. You need a cut of meat that will take a slow cook and not fall apart completely, so braising steak or similar cut of lamb - I like them fairly lean but a more fatty cut will work if you like a bit of fat. Brown off chunks of seasoned meat coated in flour then set aside. Fry off roughly chopped onion, celery, leek, carrot, turnip, swede, you name it. Few cloves of garlic, crushed / chopped too. Put it all in a big pot / slow cooker and add a bottle of red or a litre or so of stock, then simmer it either on the hob or in the oven (covered) for 3 or 4 hours. Add potatoes half way through. Take the lid off for last hour to thicken up if it needs it.

You could do the above with 4 lamb shanks, probably 2-3 hours rather than 3-4, and you'll have lovely falling-off-the-bone meat. I like to throw in a tin of anchovies - works much better than it sounds!
