My wife likes saag paneer. I don't particularly, but as a halfway house concession I made a chicken, paneer and spinach curry.



As per previous curries used the restaurant method, defrosting a frozen bag of curry base. Actually closely based in tikka masala recipe but without the cream, coconut milk or ground almonds. It does however have a big spoonful of Greek yogurt in it to give it a bit of acidity and richness.

Naan is from the local Indian supermarket. Brilliant stuff.

Marinated then grilled spicy chicken strips, cous cous with chopped mixed nuts and Mediterranean style salad.



Followed by a sort of fluffy baked lemon pudding thing, sprinkled with icing sugar and served with strawberries and blueberries.

Last night’s dinner. First proper meal out after lockdown. King prawns and sheesh kebabs starter! It was damn good.

There’s another tray as well.


24 East coast oysters for $40. (There’s another tray) We made the sauces to go with them. My 6 year old daughter decided to eat most of them though.

Cooked duck breast for the first time today. Served with caramelised potatoes and green beans with a red wine, beef stock and red currant reduction.

That site absolutely rocks for curry recipes. Every single one I've tried has been incredible.
I used that one as the base, but stripped out the coconut milk, almond flour and cream. I did put in a spoonful of greek yoghurt, and a load of frozen spinach.

Chicken is done via this recipe - https://glebekitchen.com/chicken-tikka/. First time I've tried it and it was really good. I also marinaded the paneer in the same way.

Naans are from these guys - http://www.handmadenaan.com/. My local corner shop has just started stocking them. Normally I buy from the Indian supermarkets but these are 90% as good and don't require me trekking into town.

I fully expect I'm later to the party than your parents sending videos of 'Charlie bit my finger' youtube clips after they started using the internet last week, but I can't believe how awesome the chips/wedges are when using an air-fryer are. This is third night in a row I've had them - it's a full on addiction.

Found a peri peri marinade, left it 24 hours over some chicken and just fried it off. Very tasty and was very similar to a kebab shops chilli sauce, so I’m going to repurpose it for that. Along with halloumi a la Sir Flashman.

Second run at doing Peking Duck. Marinaded overnight then blanched and slow roasted for 9 hours.



I'll do the rest tomorrow with pancakes, but today I did roast duck and rice with pak choi and spring onions.
