Made Nasi Goreng- Indonesian fried rice with chicken and omlette. Grated cucumber, deep fried shallots, some fresh coriander and roasted peanuts.

what's the supposed benefit? I do like a Ribeye and have never heard of this before.

It's perfect. You end up with a wider melt in the mouth section of medium/rare but still with a charred surface:

I think the main benefit is that it's much easier to ensure that it's cooked to perfection - especially if you're using sous vide. You can achieve more edge-to-edge pink than just cooking in a pan smile

If you don't have a cast iron pan I'd highly recommend one!

I've always taken the steaks out the fridge at lunchtime for cooking at dinner so always cooking from room temp same with a roast

rolled shoulder of lamb is the best, loads of gravy and mint sauce too mind. Have to finish the gravy with a spoon at the end.

Pork chop in sage butter, Parmesan roast parsnips and cauliflower cheese. Nice lazy or low effort alternative to a roast.
