My wife hates aniseed so I used black mustard seeds in mine. I also did a mixture of roughly 60% plain flour with 40% Italian 00 tipo because my normal plain flour is just cheap supermarket stuff. I reckon you'd probably want to use a strong bread flour to get them perfect. I think I rolled them marginally thinner than their recipe stipulates too.
I cooked mine on a very thick cast iron griddle pan until blackened. I had to keep them warm in the oven and they were very slightly too dry for my personal taste when I actually came to plate them, but were basically perfect once they left the pan- crispy on the outside and fluffy in the middle.

Indeed, so much tastier that way. I usually just do a big tray with broccoli, mushrooms, onion, potatoes and a couple of tomatoes. Mix with garlic and a bit of seasoning and leave it alone until the potatoes are cooked.
Never posted in this thread before as I’m normally horrified by my own attempts at cooking but these are two I’ve been happy with recently
