It’s called rice and peas because it’s supposed to be made with pigeon peas. The Jamaicans particularly call all types of peas and beans “peas” so red kidney beans are often used. Not sure what recipe you used but that looks totally wrong. Rice and peas when made with kidney beans should look like this

It’s pretty much rice cooked in coconut milk with red beans, spring onions, onions, garlic, allspice, thyme, Scotch bonnet, ginger and salt. You can’t use canned beans they are too soft. When you use dried beans it colours the rice as shown

Ah ok, I see.
I did use coconut milk, red kidney beans (canned, added for 5 minutes after taking off the heat and with the lid on the pan), spring onions, onion, garlic, allspice, thyme, (I didn't have Scotch bonnet so used a red and a couple of small strong green chillies), ginger and salt.
I used a recipe from BBC Goodfood, but I used chicken breast, as I've not generally got on well with chicken thigh, and I don't do food with bones in it, ha!

It’s good to try new stuff. Try this recipe for Jerk (you can make it with pork chops too)

https://www.epicurious.com/recipes/food/views/gril...

And try this one for the R&P

If you get really adventurous then try some curry goat but you should definitely find the SB chillis as the heat is quite different profile.

Yes, I will definitely try more Carribean(ish) dishes.

Thanks for the links.

I know Scotch bonnets are quite different but online supermarket shopping doesn't always get you exactly what you ask for, haha!

A friend of mine made curried goat last year and it was very good, also something which I'd like to cook myself some time.

I love carribean food and most of it is not difficult. Jamaican curry is quite simple, as is pepper steak, brown stew, stew peas etc.

Here is a link to some very "home cook" versions of many of the classic dishes its a good start - https://cooklikeajamaican.com/recipes/

Buy chicken thigh fillets. No bones, all the taste.

Rice and beans combine together to make a 'complete protein', so nutritionally doesn't need chicken with it.

I imagine it came about as a dish because rice and beans were cheaper than meat/fish for those on low budgets.

Tofu ?

Why?

People spend so long squeezing it and baking it and coating it and doing this that and the other just to get it half eatable ... wobble

If you want to make a great dish out of boring food just buy a turnip.

It sustained people in England through the dark ages ( ie no potatoes) so it is good enough today

I assume you also ride a horse to work, have no electricity, and intend to die of dysentery at 35?

First go at homemade calzone. First one was a burst disaster that took 20 minutes to clean off the back of the oven but the second came out pretty good.

Calzone, round 2. Much better this time around- gave more thought to fillings and another couple of days of cold fermenting did wonders.

One of my recent dinners.

On the left, double bacon cheeseburger with gherkins, onion, lettuce, ketchup and mayo. On the right, BBQ burger with cheese, bacon, onion rings and BBQ sauce. Homemade onion rings as a side:
