I did use coconut milk, red kidney beans (canned, added for 5 minutes after taking off the heat and with the lid on the pan), spring onions, onion, garlic, allspice, thyme, (I didn't have Scotch bonnet so used a red and a couple of small strong green chillies), ginger and salt.
I used a recipe from BBC Goodfood, but I used chicken breast, as I've not generally got on well with chicken thigh, and I don't do food with bones in it, ha!

If you get really adventurous then try some curry goat but you should definitely find the SB chillis as the heat is quite different profile.
Yes, I will definitely try more Carribean(ish) dishes.

I know Scotch bonnets are quite different but online supermarket shopping doesn't always get you exactly what you ask for, haha!
A friend of mine made curried goat last year and it was very good, also something which I'd like to cook myself some time.

I love carribean food and most of it is not difficult. Jamaican curry is quite simple, as is pepper steak, brown stew, stew peas etc. Thanks for the links.

I imagine it came about as a dish because rice and beans were cheaper than meat/fish for those on low budgets.

People spend so long squeezing it and baking it and coating it and doing this that and the other just to get it half eatable ...
If you want to make a great dish out of boring food just buy a turnip.
It sustained people in England through the dark ages ( ie no potatoes) so it is good enough today
