Of course! Beef stock reduced, red wine, onions, garlic, carrot ends, and finally beef juices after resting. Bit of effort but totally worth it

I think I’m in a minority. I love steak medium rare, but roast beef for me has to be well done. Excuse is ‘mum always made it that way’ (and don’t get me wrong, she was a great cook, and her loaf tin Yorkshire pud was spectacular).

Nonetheless, looks good!

Had a very nice meal Saturday evening, 6 courses with paired wines for £110 which I thought was pretty good value.

Highlight was a relatively simple cured salmon with beets and dill. So much so Mrs21 has ordered it (from me) in a larger form as a salad for her birthday lunch with family at home.



The rest of the meal was as good, asparagus with iberico ham, duck, tonka bean panna cotta and cheeses. Didn't bother with pics of it all but this was the panna cotta.

Using up freezer stuff ,off away on holidays Sunday, yesterday’s chicken wings done in franks then put Tabasco schriacha on ,and salad ,




Koftas and belly slices with salad tonight,some skeeters BBQ sauce to dip the meat in




Got some Brains faggots tomorrow, hehe they’ll raise some hackles on here

No they won't, you'll whack them in the oven as per the pack. You will reminis and fondly remember how you enjoyed them many years ago. After the alloted time you will remove them from the oven with a quisical look, wondering if they are "right".

You will add mash and veg and maybe even some extra gravy.

You will taste... then check again.

You will then consider what else you have in the fridge you can eat or look on just eat.

I'm with Monkey on this - there are certain things in life that you don't scrimp on, - weirdly condiments being one of them - Heinz ketchup (kept in the fridge of course) HP Brown Sauce, Colmans English mustard all prime examples.

Sainsburys ketchup is actually fairly nice. Quite different to heinz, more savoury.

I am partial to Daddy's Brown Sauce with Fish and chips - but not found anything as god as Heinz ketchup (other than mayonaise for your frites when in Holland/Belgium)

Heinz Ketchup is absolutely lousy, I've realised as I got older - heartburn central.

Much prefer a nice boutique ketchup if I'm ever partial.
