Fancied genuine Italian, so here we go

Me adding the parmesan to the sauce, cooking in my wok

Et voila

So authentically Italian it’s had three prime ministers in the time it took to cook

curry night tonight. I got a couple of emperor prawns to stick in it as a monthly treat, they are about half the price of an equivalent lobster tail.

Frau GenX did pichelsteiner tonight - it’s basically Irish stew with pork and beef, and takes me straight back to my childhood. Outstanding with HP sauce, first of several helpings shown…

Her indoors nearly collapsed when I said it was a veggie dinner - she’s struggles with the amount of red meat I eat these days. Got the lurgy so didn’t want to go shopping

Had peppers and a courgette going to waste, so stuffed the peppers with feta and cous cous, then marinated the courgette in zatar, olive oil and lemon and grilled it, and served it with yoghurt mixed with lemon juice, zatar and olive oil

Was really tasty

But I now need a steak biggrin

Saw a few italian dishes here so tried my hand at homemade bolognese following this - https://www.jocooks.com/recipes/spaghetti-bolognes... with some added streaky bacon.

Looked ok - but was rather bland (and not nearly as good as mum makes).

The reason it was bland was that recipe you posted is hilariously short on cooking time - getting the flavour into a sauce takes a good hour, at least - I’d be simmering that for 90 mins or more. Not your fault, but a lesson to build on for the future

You can’t shortcut flavour in a meat sauce IMO!

For Italian authenticity, I’d always defer to you though - you’ve not wasted that gap year you spent slumming around Sicily and Puglia, picking up kitchen work wherever you could, but keenly looking over the shoulder of the chefs as you got stuck into the dishes

The reason it was a bit bland is because theres virtually nothing in it and according to the "recipe" cooked for a fraction of the time it should be (as already mentioned).

You appear to have invested quite heavily in your cooking appliances, this is worth a few quid (or dollars).
