Hainanese chicken and rice, pak choi, crispy chicken skin and three dipping sauces. Ginger garlic sauce, sweet soy and sesame and homemade chilli sauce.

Chicken stuffed with taleggio and thyme, leek risotto. Trying out my MEATER, chicken was very nicely cooked at 74deg.

All a bit dark in colour last night but it tasted good, griddled ribeye steak and chicory with a pan fried mushroom, confit beetroot and a shallot, garlic, rosemary, port and bone marrow sauce.

Pakistani chicken Karahi. For a 30 minute cook it’s packing some flavour (and heat!)

Thin-sliced left-over beef bottom rump with udon noodles, sweet pepper, onion, cabbage a little garlic and some teriyaki sauce.

Colour just looks wrong to me. Udon noodles are stark white

Rice dishes like that seldom look good but taste great. I’m a fan. More so in winter with some spice!

Very loosely based on Clare Smyths "Core Fried Chicken" with shop bought coleslaw pimped up with pickled red cabbage, pickled red onion and pickled jalapenos. Lots of ingredients but no work as such. I also marinated the chicken in shio koji for an hour before the main buttermilk marinade.

It was good. So much so I have another batch ready for lunch!

it's surprisingly easy to make great fried chicken. Also surprisingly forgiving in terms of the batter mix... you can just use your intuition a bit and throw the sorts of things you might expect to see in there without really following a recipe, and it comes out banging.

On the way back form Leics to Cheshire with the GF last night, we wanted to find somewhere to stop for dinner and had a quick google. Best suggestion we could find was a canal-side pub just off the A50 near Derby, called the Ragley Boat Stop.
Turned out to be a delightful rural pub, part of a larger chain, with a fantastic menu and wonderful terraced eating patio alongside the canal.
I had the King Henry VIII special 24ozrump steak, and the GF had a butterflied breaded chicken topped in melted parmesan and cheddar.

10/10 would get stuffed with meat here again!
