A Veggie and Vegan thread

Thanks for the response, it seems a likely case of different strokes for different folks then. Battery rescue is very worthwhile, I've seen first hand how near featherless skinny birds have been transformed in to plump feather covered ones. How we can call our self a nation of animal lovers whilst BH's are allowed is beyond me.

We're trying to eat more vegetarian/vegan meals. I made this the other evening, it was flipping lovely!

Thanks. Tried it last night - I never buy sweet potatoes but it's a really nice dish. Had it with brown rice; another staple I rarely have.www.olivemagazine.com/recipes/vegan/west-african-s...

Another late night homemade takeaway. Vivera shawarma and chips with a bowl of guacamole.
I love the Vivera shawarma! Fry it up with onions, peppers, mushrooms and a bit of garlic. Mix it up with rice and wrap it up in a tortilla for a monster vegan burritto. Amazing.I'm not a vegan nor vegetarian but I try pretty much everything and so much vegan/veggy stuff is excellent these days.

Something to counter some of the amazing healthy dishes posted already....
Those of us who don't eat meat usually miss something occasionally, this is my go to for meat replacement in a cooked breakfast - I'm not sure how many of you are familiar with our Scottish square sausage but this stuff is a really good meat free alternative.

Here's a genuine one for Vegan contributors, RE eggs. Eggs aren't allowed under Vegan rules, as I gather being vegan is (in part) a standing against the industry of animals being farmed how they are for produce.
Some may have noted (https://www.pistonheads.com/gassing/topic.asp?h=0&f=&t=1812472) that we now have a hen, and her rapidly growing 11 chicks. S goes to 11 when it comes to caring for any animal, these hens are having a fab fox proof hen run and house being currently built, they eat incredibly well, and they'll have near 300 square foot of run for 10 hens (two at least are cockerels, may end up needing another run) when the recommended minimum is 10 sq ft per hen.
We'll end up with more eggs than we can use, with this in mind I asked our Vegan builder (who knows how well S looks after our animals) if the rule could be broken for eggs from them, as there is far from any welfare issue, they're probably the most pampered hens for miles!
The answer was no, what's that all about?
Depends why you’re a vegan imho. I’m doing it (when I do) to be healthy to so no eggs. That said eggs are prob one of the hardest things I find to give up! I forgot to take a pic, but I discovered the veggie alternative to pulled pork on the BBQ yesterday: pulled king oyster mushrooms.
Shred the mushrooms with a fork, give them a light coating of vegetable oil, then your rub of choice - mine was Salt Lick Original with added garlic and cumin.
My favourite bits of pulled pork were always the crispy bits you'd get around the edge of the tray, and the same is true with the 'shrooms.
Probably my favourite thing to come off the BBQ this year. Can see that becoming a staple.

"Brazil nut, barley & butternut block" - I hope it's more tasty than it sounds, don't think I've ever seen a "block" on a menu before https://www.quinceandmedlar.co.uk

Have you got a specific recipe or do you know what they're called?
King oyster mushrooms are pretty meaty and they're pretty easy to get, some supermarkets and pretty much any decent asian supermarket will have them.
Not steak obviously but "Chicken of The Woods is delicious - some say they're more like Lobster than Chicken.King oyster mushrooms are pretty meaty and they're pretty easy to get, some supermarkets and pretty much any decent asian supermarket will have them.
