I have mixed feelings about the giant fast food chains doing vegan food. Obviously it's good from their pov and it's always handy to have a bit more choice if you're stuck for somewhere to eat.

Depending on why your vegan, it seems a bit hypocritical to give a company like McDs your business though. From an environmental and animal rights viewpoint they are very damaging.

I realise picking at that thread is dangerous because you start looking at supermarkets and the companies that produce the food you eat at home and you end up at the point where you can only eat what you grow in your garden laugh.

I'm not perfect by any means, I've had my fair share of greggs vegan sausage rolls. It's just something that bothers me every time I see one of these articles.

well theyre not going away any time soon so its good they are going to have them and it should reduce beef consumption which is good for the environment and cows.

agreed that ideally we'd be eating local fresh fruit and veg but its a step in the right direction and a massive signal times are a changing.

still cant bring myself to go in greggs though wink

I think you'll find that their plan has nowt to do with reducing beef consumption - they're not in the business of trying to convert people they want extra customers that wouldn't otherwise go there.

PS. totally agree with you on Greggs. Never liked it when they only sold bread and a few cakes. Had a pasty there once that was hotter than the surface of the Sun! Next one I had was stone cold and came with a free lecture on VAT regs rofl

I don’t think we need to be super strict on what people post. As long as it’s not completely off topic or deliberately antagonistic then I think we’re good.

I had another go at vegan macaroni cheese the other day. Wasn’t right, I hadn’t soaked the cashews for long enough so it didn’t blend complete smooth and I put too much mustard in. Was still tasty enough to eat though.

“Pulled” king oyster mushrooms as mentioned above, this time with A&O shawarma rub. Bloody lovely.

Haven't read the whole thread so not sure if Hello Fresh have been mentioned....but the other half is pescatarian and wanting to try Hello Fresh for a bit of convenience and to prompt us to eat more healthily we gave HFs vegetarian meals a go (as they don't do one just with fish).

They do some cracking meals that have really opened my eyes to things like lentils, chick peas and the use of spices (I don't think I was that shabby a cook before on the latter...though avoided lentils and chick peas as they always seemed like dull, oddly textured stodge to me).

We stopped getting the boxes a while back now (the meals do start to become a bit samey) but use the recipe cards more often than not.

They put quite a few recipes on the'net I think. Worth trying.

A couple of favourites are a lentil hot pot (avoiding this at present as am trying to keep the carbs down and it's potato laden) and a veggie chilli/stew that's accompanied with the best way to eat cauliflower (mix uncooked florets with mayo, mix some panko breadcrumbs with "mexican spices" - we use smoky fajita mix instead but there are plenty of ways to do this to taste - and then combine until the cauliflower is liberally covered...tip out onto a baking tray and roast at 180degC for 20-25mins. Yum).

Aye Quorn vegan nuggets. I didn't want to dirty a plate so I just dumped them on top of the macaroni and ate it out of the pot.

Does anyone have a good source for Vivera products? Waitrose do a couple and Tesco do a couple but even combined it's a tiny part of the range.

I was in a big sainsburys that seemed to have quite a lot of stuff. They had both types of the kebab style stuff and a few different burgers. Maybe some kind of pulled jackfruit as well.

Where do you get the king oyster mushrooms?

I tend to use Jackfruit for 'pulled' dishes and cauliflower for nuggets.
The Maggi cook in bags are great for this, but then into florets place in the back with a splash of water and olive oil tip in the seasoning (by a is our current fav) then bake in the oven for about 40 minutes.

More supermarkets have them now but you should be able to get them at any decent sized Asian supermarket.
