Funny you mention that - it was only a day or two ago I realised that Quorn isn't vegan as standard, because it contains egg white. I'm veggie rather than vegan so not an issue for me, but I'd have probably used it to cook for a vegan if I hadn't checked.

Made “sausage” and mushroom creole tagliatelle this evening. Thoroughly recommend it.

Make some creole seasoning (1tsp cayenne pepper, 1tsp paprika, 1.5tsp garlic powder, 1tsp salt, 1tsp dried mix herbs, 1tsp white pepper, chuck in spice blender or shake in a tub)

Put a pan of tagliatelle or fettuccine on to cook.

Sweat off an onion in butter, add mushrooms and chopped pre cooked “sausage” (we used a chorizo style one) cook for a few minutes

Add a couple of cloves of minced garlic and 2tsp of creole seasoning and stir through and cook for a minute or two. Don’t let the spices burn.

Stir in 2tbsp of tomato purée and 200ml of double cream then allow to simmer for 2-3 mins

Drain pasta and stir in.

Enjoy!

Quite surprised to find a vegan thread in here!

Mrs L has been vegan for 5 years and veggie for 10 years before that. I’m not anything (in that I eat anything) but naturally eat mostly vegan food at home. I barely eat any red meat now but do still eat fish if we’re out. Oddly, I don’t miss what I’d call real meat at all (and I used to eat masses of it), what I do miss is the st like chorizo, salami, bacon etc. All the crap!

I’m generally not that keen on meat substitutes but love actual veg dishes and beans/pulses etc. I’ve also grown to like tofu which I never thought i would.

This weekend we went to Gaulthier Soho and it was exceptional - and pretty good value for a Michelin star fine dining restaurant in London. £95/skull for the 8 course tasting menu. Highlight for me was a fennel and orange dish - incredible. Lovely bloke too.

Anyway, I’m going to read through this thread and look for some inspiration. We eat lots of home made veg curries, stir fries and stews, pasta, risotto, paella etc.

I’ve failed to keep up with this thread…..our offspring are vegetarians, so Christmas Day tends to be a veggie day.
Last year the main dish was an amazing pithivier: absolutely delicious lick
Year before was a very tasty veg wellington.

Any suggestions on a main for this year?
I suspect our kids (mid 20s!) will have some ideas, but always open to new ones here, to avoid re-using those previous ones. I could be the hero for supplying a humdinger if you can help. Nut roast: only if amazing hehe

Last year my mrs made a vegan sausage roll thing with Simon howie sliced sausage and lots of sage and onion with some, apple, caramelised onions and puff pastry.

We had a turkey as well for the outlaws and kids but honestly I think everyone enjoyed the vegan thing more.

That, along with marmite roast tatties, sprouts, vegan stuffing from Markies, parsnips, gravy etc. it was superb.

That Simon Howie sliced sausage stuff is good - makes stovies that I would be hard pressed to differentiate from the real thing. I know I just said in a previous post I don’t like meat substitutes but I make an exception for this stuff rofl

My partner wants a roast this year so I'm going to make a chicken and just get myself something for the oven from the supermarket.

I'm all about the roasted veg though so it's fine.
