I was talking of a home made nut loaf. I don't do ready made food.
Otherwise, what about a good rosti mix which you stuff in a timbale and stuff it with spinach and nutmeg mix, use the same red wine mushroom sauce. I guess it will be easy enough to store ahead of the big meal.

Strange you should mention a timbale. Thats the lastest plan, didn't bother with taking pics but used mixed brown and white rice with sauteed shallots, mushrooms and chestnuts with spinach and fresh tarragon. Pressed into a mould, chilled then roasted for 10 minutes to crisp up the outside.

Taste tasted on about 12 people and they all said it was a go-er. Few more tweaks and it will be okay,

Sounds good. Easy to prepare ahead and easy to plate. You are on a winner.

Just followed the back-of-the-packet recipe from Lee Kum Kee ‘Kung Pao Chicken’ sauce, adding Vivera chicken pieces, red pepper, cashews and spring onions - result: bloody gorgeous!

At $60 I’m not about to find out, although the comedy value of Xmas day, proudly standing over it, theatrically sharpening the carving knife shouldn’t be dismissed.

Sadly it’ll probably be the good old £3 Quorn family log for me.

urgh just make a stir fry and throw some cranberries in to be festive!

Watched game changers; gone vegan.

Really struggling, especially when out for food in restaurants - is it really bad for a plant based diet to consider including fish or will it undo all my good work (2 days in so far!!)

v difficult time of the year to be vegan I find as I want comfort food. i wouldnt knock yourself out if you have some well sourced fish to start with. how many restaurants have you been to in 2 days!!

Ha ha none - going to one tonight and contemplating the vegan salad - fine with that as long as it’s filling!!

best tip i found when trying to be vegan ( which i fail at a lot ) is to make sure you eat stacks. dont try and do it and "diet" at the same time. ie dont just eat salads theres loads you can eat! make sure you are always full and have food at hand as if you get hungry you will reach for the nearest bacon sarnie..

if all the restaurants have is a vegan salad go to a different restaurant!

Where do you live? Almost all of the chain restaurants have full vegan menus now, you have to ask for them though.

A bit of fish won't undo anything. You've picked the best time ever for turning vegan though, pretty much all chain restaurants will have at least a ocuple of options. Be prepared for variable quality and paying slightly over the odds though. Accept vegan 'cheese' for what it is, best not to compare it to cow cheese.

Cauliflower steaks with kale and walnut pesto

Looked just like the pic. Had it with sprouts fried with Vivera bacon goujons. The latter are a little salty so only a few needed.

Dead easy. The pesto’s nice and tangy, the cauliflower so underrated (after years of boiling it to death), calling them ‘steaks’ and having the usual suspects frothing... there really is no down side. Overall, excellent - definitely have again.

I ended up getting a vegetarian dahl curry which was delicious and filling.

I'm softening my stance to just going meat free (so including fish and dairy). Main aim is to increase natural strength and energy along with improving health (not that it's bad).

I'm trying to research the differences (to me) from being a pescatarian rather than full on vegan!

that looks great - i keep meaning to try the cauliflower steak thing and that looks a great first recipe

the amount of plastic thats in fish these days puts me off - that said i still have some occasionally but like any meat ensure its the best quality. when i went vegan i found dairy harder than meat to give up and have failed miserably recently
