As a family we've lurched towards vegan as my wife is diary intolerant, and in the process of finding out what was wrong dropped meat. Our son is also an ethical veggie.

I'm not a mega 'foodie' but I just can't get on with the Bosh stuff. I always seem to have three pans, the oven, two mixing bowls and a couple of 'storage' bowls for 'add one third of the mix to two thirds of the mushrooms' etc... way too much faff and the end result of buying specialist ingredients, covering your whole kitchen worktop and over an hour of your time is food that is 'ok'. I don't get the appeal? There seems to be a lot of these colourful 'personality' books available and so far I couldn't recommend any (Bosh, Feed me Vegan, Dirty Vegan etc...)
One thing I will recommend is getting a proper deep fat fryer (with adequate local extraction). Falafels, crispy battered tofu or just brilliant chips. They're not expensive if you already have a decent extractor and they open up a lot of options.

The Bosh chilli is amazing! An absolute faff and you'll probably use every utensil and container you own but it's incrdible. Interesting you chose that one, it's the one that sticks in my mind as being the most disappointing for the effort involved! Making a tasty veg chilli isn't difficult.I am kinda glad to hear someone likes it though.
I am not full on vegan and mainly vegetarian so I do a lot of mix and match. Recipes are guides and should be treated as such. If I look at a recipe that seems like a significant amount of faff the first thing I do is start to try and find ways of shortcutting or consolidating, either by buying a cheat ingredient or my switching out the method.

I’d read about it a while ago, the article said you need to follow the recipe to the letter to layer the flavours properly. Granted it took me hours but I absolutely loved it. Some of the Bosh stuff is just common sense cooking but there are a few bits I think are worth the effort.I am kinda glad to hear someone likes it though.
On another note the Aldi mushroom “not sausage” rolls are really nice although pastry and trying to eat healthily is a bit of a quandary

Which one are you referring to? I'm seeing a 'high-protein' tofu recipe, a jackfruit one and an quick to make smoky one? Thx.btw - glad you enjoyed the bacon, Rasto!
New to this thread. I have a couple of close vegan friends and after watching the David Attenborough "my witness" documentary it has really made me think.
Thankfully I'm conscious of what I eat and I like to eat healthy home cooked meals. I can't remember the last time I ate pork, however, I eat a lot of chicken but minimal beef. 2 of my meals a week are vegetarian but I've added 2 vegan meals into the mix.
Last night I made vegan ramen and I was very pleased with it. Another vegan meal I can recommend his satay sweet potato curry- both are easy to follow.
Satay sweet potatoe curry (vegan- just make sure the curry paste doesn't have fish sauce if you're strict. I also add peas and lentils towards the end):

MrsC is a very principled vegetarian, and will probably eat less than one meal a week with meat in on average. Since we moved in together, I have become a lot more aware of the source of meat that I eat.Thankfully I'm conscious of what I eat and I like to eat healthy home cooked meals. I've stopped buying cheap supermarket meat products, and eating meat without really thinking (in pre-prepped meals, and takeaways). Now on the rarer occasions that I do eat meat (3 meals a week maybe), I make sure it's free-range and responsibly-sourced, and almost all of my meat is bought direct from nice butchers.

I'm not trying to be a martyr. I'm just doing a little bit.
Genuine question: has vegan cheese advanced on from the utter crap that is violife? I swear the makers have a small chuckle amongst themselves with every packet that is sold. It tastes like edible plastic. I have a couple of vegan relatives who I am more than happy to accommodate, but the lack of a proper cheese substitute - i.e. tasty, melty is lacking.
