Doesn't salt break up the egg white? I thought that was a big no-no.

I always just poach in lightly simmering water with a splash of vinegar in. They always turn out fine.
Yep, dont use salt.
I never use vinegar either. I don't like the faint taste and it isn't necessary anyway.
It helps, but yes, you can cook them without.

I only use a gnat's pee of vinegar and never notice the taste

The thing about eggs is that the proteins in the white break down over time. Break a freshly laid egg onto a plate and it’ll sit up in a gloopy white; break an old egg onto a plate and you’ll see it run out sideways. Hence fresh eggs are much easy to poach.

Anyway, today’s effort from Hilton The Hague, surprisingly good scrambled eggs (and massively salty veal sausages)

A great deal of catering scrambled egg - certainly at the budget end of things - is made from powdered egg rather than fresh. It works surprisingly well, and most people probably couldn't tell the difference.

I didn't want to know that.

you sure it's not liquid pasteurised egg in cartons? Most large caterers use those now in varying ratios of yolk:white.

Interesting machines to see at egg processing plants.

Could be cartoned-egg. The point is that caterers need long shelf-life, reliable quality and non-fragile stock, so 'real' eggs are a bit of a pain in the arse.

I forgot to put the hob with the hoops on when I started and I also only had Swedish bacon but this no carb effort has just hit the spot.

I really don't know why people get their knickers in a twist over my beloved 'oops laugh Marco Pierre White and James Martin have both gone on record saying 'oops or beans are both fine on a breakie.

A slice of Emmenthal under today's scramblies added a nice touch.

Same place as two weeks ago - Old School Café. I didn't pay as it was part of their apology but I think this was £7 on the menu. The bubble and squeak was not what I expected but I wasn't complaining. The bacon was good and thick

I'd prefer nice bread as toast, and maybe a second egg, but that looks spot-on.

Numberology business aside, that's a good-looking breakfast. I'd want a bit more toast and some hash browns and perhaps some beans (insert beans debate here) and then I think it'd be about perfect. Good going Gandahar!
I’d second that. Everything looks great. Just some beans and/or toms to provide a bit of lube.
Jesus Christ, some people are never happy ! I had to use Alan Partridges "big plate" just to fit all those on.

I do like a grilled tomato on a breakfast and even some baked beans, within moderation and not making the bacon go limp of course. Perhaps use the sausages like a Thames Barrier against that?

But hash browns ?

No.

No.

No, a full English does not have any hash browns from our colonies over seas to the West .....

I'd rather cook my mother in law and put her on the plate.

Wrt Resolution 49.6.01.

It was clearly established that Hash Browns have every bit as much right to claim dual nationality as the dayglo thugs
