Wings don't work that well on the smoker, they can turn out rubbery, better to stick em on the BBQ. Cooking pulled pork and Beans for 50 today, 3 shoulders.
Missed that, too late now, will give them a start on smoker then transfer to gas - thanks.

Stuffed now so off to sofa to watch the footy.
Will be doing both again in a few weeks for 20+ people.

Went well! Enough real estate for 3, rested (FTC) for 6 hours and was incredibly juicy and had an amazing smoke ring.

Idiot though didn’t take a pic of it being pulled!

Basically this one but I add a good splash of fish sauce and some tamarind paste. Strain the marinade once the chicken is on the skewers and use that to baste whilst grilling, finish with a squeeze of lime and sprinkle with chopped coriander and sesame seeds. Rice is just boiled and left to steam covered in foil for a few minutes then a shed load of chopped coriander and mint with some sliced chilli mixed through. Chopped spring onion would have gone in too but didn't have any.

Just built this in time for summer & a nice BBQ. Was meant to be a 'kit' but really was just a pile of wood! 1 bank holiday weekend later...

- Slice pork belly into 1inch chunks
- Coat well with rub (I use A&O sweet bones and butts)
- Smoke for 2 hours at 225f (I use apple wood chunks but cherry or other fruit wood works equally well with pork)
- cover with tinfoil for an hour with a splash of apple juice
- uncover and glaze with BBQ sauce for the final hour

The biggest tip though, make twice as many as you think you'll need. They're more addictive than crack.

You could do them hotter and faster if you wish but I usually stick them on with some ribs or a pork shoulder and use them for beer snacks ahead of the main event so prefer the low and slow approach.

My point was, how come one post is in the corner close to the bricks but the rear post seems to be about 12 inches from the bricks on one side.

Oh I see! Sorry. The patio is an irregular 4 sided shape. It's sides are parallel to the boundaries of the garden so it looks right in person so to speak.

It isn't! It weighs over 2 tonnes. I was going to bolt it down but the 3 companies I spoke to all said not to bother.
Having loaded it off the delivery truck piece by piece I can see where they were coming from TBH. Fingers crossed.
