I'm from the north so random deaf blind jack Russel , loves it in the BBQ hut
We've also both fell over !
Makes me think my retirement/lottery winning home will need to have a giant Henry VIII fireplace. The sort big enough to walk into and do multiple hog roasts.

That’s tremendous - not quite in the same league but my house extension currently under construction has been designed with maximising bbq and pizza opportunities in the Aberdonian climate - a covered patio right outside the kitchen - will share a pic when it’s a bit closer to being ready!

Since the photo was taken I’ve added a hinged side over the bar and a UV heater.

My ever understanding wife (SWMBO) has bought me this beauty for xmas...



Kamado Joe Junior

Without delay a rack of ribs was purchased marinated and cooked...





A bit under smoked but had promise, I was impressed with the ease of temperature control and constancy of temp.

Next we tried searing sous vide steak and it was so good there are no pictures!!


So today we got serious and did a pork belly ... OMG.....

used the heygrillhey recipe...

Result was excellent




Fantastic smoke ring, meat fell apart and a firm well charred skin. I used a home made rub, marinated overnight, Jim Beam maple sauce.

Awesome.

Well it's Xmas eve and its bbq time ! Check the last page if you don't believe, lamb chops with crispy rendered fat , roasted cauliflower with a dusting of curry powder and some garlicky cheesey bread that really needs eating as it's a couple of days past it's best , toasted with raw garlic rubbed over and drenched in olive oil it'll be fine .
Merry Xmas

Ps , turkey Tomorrow at the in laws may be a let down ?
I'll post a pic for the non BBQ believers if i must .

Looks more exotic than it is, we’re in Wales laugh.

It is a gorgeous location, we’ve been lucky with the weather and there’s never more than a handful of people on the beach at this time of year which suits just nicely smile .

Pork was superb, ready before the beef obviously. All with a mesquite wood smoke and rubs applied some days ago.

Beef as also great. Butcher left the small rib bit on, stand on its end and just carve huge sheets off.

Have been cutting down some small trees and shrubs in my partner's garden recently and took some of the wood home. Didn't leave it nearly long enough, but it was dry enough to burn.

Had a few beef burgers, nothing special! It did give them a different taste to charcoal, and I like the idea of using free fuel.

New Years Eve. Was smoking some ham for a friend and also some pulled pork for ourselves for the evening.

Taken just as the ham was ready to come out. Pork still in the foil.

Rotisserie was an Amazon black Friday deal last year £72

Garlic & Celery Salt and black pepper just over an hour. Crispy chicken skin bounce

After a bit of advice please! Whenever i try and do pizza's on my Weber kettle, i can never seem to get it hot enough! Can't get the temp gauge over about 300... and that's only for about 5 minutes. Slowly drops down to about 200 degs.

First pizza takes about 10 mins, and the second one almost doesn't cook at all!

I have both bottom and top vents open & using a full large chimney's worth of lumpwood charcoal. What am i doing wrong?

^^ I am no expert but I definitely find it helps if you stash all your coals at the back of the BBQ - that allows the air to flow through even quicker and more effectively than if your coals are spread out.

I use something called a BBQ dragon, but a hairdryer pointed at the coals would have the same effect.

The weekend looks dry, so in celebration of the lock-down I've ordered a pork butt and some beef short ribs. That's good 24* hours of slow cooking there bandit

Here's a couple of pics from last year's cooks to whet the appetite lick





  • c. 15 hours for the butt and c. 9 hours for the ribs

Nice bit of pork today, short ribs on tomorrow!

For the first time, the Joe used up all the charcoal. Lit it at c. 1830 Friday eve and all gone c. 1500 on Saturday. I've had it burning low for that long before and it's had plenty left. Big Block Kamado Joe charcoal as always. confused

Seems to be shed loads of pork in our local shops so I'm going to get my BBQ out of hibernation and get cooking, should see me entertained on my days off (if they're not cancelled)
