Got together with some friends last night.

One bought some very nice Denver steaks, apparently a wagyu dexter mixed breed cow. Reverse seared them and they were great. Not too expensive either.

Also blackened some peppers on the chimney starter grill, then made an Asian salad (soy, sesame, garlic, chilli, sichuan pepper, lime, rice wine vinegar)

Also, Marcus Bawden of Countrywoodsmoke is releasing a new book - Skewered.

Loads of recipes for things to cook on sticks, plus sides /accompaniments.

If it's anything like his first book, it'll be epic.

I am progressing in the world of BBQ since i acquired my SNS Kettle. I recently got a Plancha and spent Saturday burning oil into the surface to "season" it. Therefore was ready tonight to try smash burgers for the first time. Fairly straightforward, 3oz ball of mince, 80/20 fat and a quick bit of seasoning, then smash or squash into the surface of the plancha. Burgers were ready within a minute or two but i noticed some black residue on the surface pre cook which mean the first few were a bite ropey.

Did i mess up my seasoning? I was under the impression that seasoning would result in a non stick surface, not a non stick but has some burnt residue that breaks off on it?

Other than that kids loved them, very tasty and must be sorta comparatively healthy by BBQ standards as they are just 3 oz of unmolested mince.

I'd say the key word there is "burning". Burn anything and it'll leave a residue.

Not sure where you got your instructions, but if you were seasoning cast iron you'd do it at quite a low heat, and leave it to cool between coats.

Yes, I’ve got one, but haven’t used it in anger yet. Only had it a few weeks.

Hoping to use it this weekend, but haven’t decided what to cook yet.

Found this useful, for working out where to align the numbers.

I've had a TTT for about 6 months but only this weekend opened the box. Going to try a chicken at some point, my mate has one on his weber 57 and swears by it and keeps temps stable for ages. Came on here to look for advice. May just light up some coals and see what it does.

Did a tomohawk this weekend. Reverse sear.

Has anyone smoked a Christmas gammon before?

As got the time this year was thinking about doing one from scratch.

I could smoke a plain one or go all the way and cure it first.

Interesting, but I bet its nearer £700.....
Video says 500 dollars expected so probably 500 pounds by the time it lands here.

Definitely brand proliferation... and why not try to gain a larger market share with a cheaper-than-kamado offering.

Interesting, but I bet its nearer £700.....
£500 - £600 would be my guess.

Suppose they could offer it with or without the slow roller thing at different price points but then again the MTP comes with a diffuser as standard doesn't it?

They make quality kit but why not just buy a kamado (not a Joe) for that money. Kettles are far inferior at low and slow cooking. This will be far better than a Weber judging by the kamado coal basket and vents but still won't have the heat retention capability.

So £500ish when it levels off then?

With the ceramic bits and the slow roller thrown in plus side shelves and the KJ aesthetic, plus lots of interest from us BBQ nerds this is going to do well I think. In between a grill and a kamado so will appeal to a lot more people.

Tried my tip top temp today for the first time. Had it since July

With a slow n sear it held steady, within 4c, for 5 hrs, after wrapping which is the 3rd dip in the graph it went up basically because I left the lid off and let air get to the coals.

Took some faffing initially to get temp sorted, got it running too hot to start with and had to chuck out a few coals to bring the temp down. Story of my life

6 hr cook, 1.8kg briskett from turner and George. Couldn't be fked with a long cook today, I've got an aussie briskett on the way to run a longer cook with. My mate has had overnight cooks stable with this gadget no bother.
