Pick-up not really an option, would add quite a lot to the price if I had to include a manchester to london train ticket in the equation. It'd almost certainly be cheaper to get it ordered from a local butcher than online, it's just a struggle to get to one when they only work when I'm at work!

google is your friend... try googling 'organic meat deliveries' for your area and see what it brings up. Then ask the supplier how they age the meat... it should be hung in a cold room for a month or so. It will cost more than what you get at Tescos, but you already know that!

I see you're in Manchester. If you took a trip across to Wilmslow, you could pick it up from these guys: http://www.theartisanmeatcompany.co.uk

I can wholeheartedly vouch for the quality of their meat - all very well hung and locally reared. They open Saturdays & Sundays too.

I would say so. Don't be afraid to ask them if you're after something particular, they're always happy to cut something.

You could stop off at the smokehouse too.

Not much to add to sourcing the beef unfortunately - I usually just rely on Sainsbury's meat counter boxedin

However my favourite way of cooking it is really simple, with olive oil and balsamic vinegar; the balsamic helps caramelise the outside of the beef. I found the recipe here:

Add veg of choice, some of Nigella's port & stilton sauce, and a big glass of Ravenswood Zinfandel - foodie heaven lick

Hi all - Time to resurrect. I'm hosting a Christmas dinner party for 12 people in a couple of weeks and want to do beef rib. Think I'll need around 5kg - any more recent recommendations before I open my wallet (and shed some tears) at The Ginger Pig?

Not massively keen on Donald Russell given they freeze it.

I actually forgot to pre-empt this comment as I knew it would come. Just like anything - there are good butchers, okay butchers, st butchers. "Local" does not equal "great". I would rather get a real-life recommendation from someone for a specific company - plus it's less hassle.

Go to the butcher on a random Saturday morning.
If it's full of people, it'll be decent. High street butchers don't last long as it is. 'st' ones will go out of business at the drop of a hat.

Can I recommend that you go for Cote de Boeuf rather than rib of beef. It's the same cut, but it's been trimmed a fair bit. It's easier to cook and easier to carve and easier to fit in the oven.

As already mentioned, HG Walter are in Barnes and are very good. Ginger Pig have a shop in Waterloo. If Marlow is convenient by car (might be quicker than getting into London), then the Butchers Tap is also excellent. All of these are to collect in person.
