Oh god this is painful already. They'd be better going hipster and doing bean curd and lentil burgers and flogging them down Camden market.
Goat is quite nice as a meat, but if they wanted high end, why not do ostrich burgers. Can pick up a carcass for £400 (get 25kg of meat from that)
Turkey is awful for burgers. It goes very dry, shrinks and needs a lot of additives. I don't think any of these people have the first clue what they're doing.

I ran a restaurant/cafe/bar a while back, and we used to buy our chicken breasts through a company called Brake Bros., who sourced them from Holland....there was an expose a few years ago about their "chicken" - injected with water and beef protein.
