I was reading something about flat-earthers the other day. They are an interesting bunch, as while their creed is pretty much the uber-conspiracy theory, (on the whole) they don't believe in UFOs, ghosts, chemtrails, 911 was an inside job, etc, etc.

Where do these people suggest the edge is ?

Surely it would be cheaper to sail / travel around the equator ? If he lives then it is a sphere if he dies then he was right !

if the earth is spinning why when say when a helicopter hovers does the earth not spin away from it? not even a little bit spin under it?

Ahh, but what about all those NASA guards apparently stationed around the edge? I'm guessing they have the world's best surveillance operation & hundreds of thousands of staff in order to police 'The Edge'. The circumference must be thousands of miles. Oh, & wouldn't the Russians/Chinese/Mossad/et al have to be involved in this sinister plot?
If it is indeed a disc, would not all the sea water cascade over the edge in a giant waterfall??

No, the water doesn't spill over the edge of course, there's a splashback to make sure of that. They stop too much escaping by making sure you wait an hour after you have eaten before you go swimming in the sea,

The helicopter takes off with the same spin as the earth, the air is also travelling at the same speed.

As long ago as WW1, the Germans were having to take account of the spin of the earth when aiming the "paris cannon" which put the first man-made objects into space. Actual physical demonstration of the fact, 100 years ago.

They believe that Antartica is actually just a huge wall of ice and that the treaty to 'not go there' was signed as part of the conspiracy. See also the apparent lack of direct flights between places south of the equator - apparently because the actual distance between Cape Town and Melbourne is too far to fly. So the planes go via what is actually a straight line across places like Dubai. They do take it very seriously.
