Romantic / Boutique Hotel Recommendations

Chaps / Ladies,
Always looking to work on recommendations rather than gambles.
I am looking for a good hotel to whisk my new lady away to in the middle of May.
It will only be a quick weekend escape, so ideally within a 2-3 hour drive from London.
No set agenda.............. so could be a Country Retreat or City Boutique Hotel.
Quite happy to stay within London if the Hotel hits the spot.
Sensible budget, I'm not minted! ;-)

We have just come back from a mid week break at The Orchid Hotel in Bournemouth. We stayed in a Classic Double room in the old part of the hotel - these are the best rooms - and found it very agreeable. We stayed on a B&B and Dinner basis and had the afternoon tea thrown in as well. The tea was superb. Nice hotel with a modern relaxed feel and ideal for the beach - just on East Cliff and ten minute walk to the gardens and town centre. Good location to go down to Sandbanks and across on the chain ferry to Studland.
I'd definitely recommend the Hotel Du Vin Poole. We stayed in the suite in the review below. It was amazing and the restaurant was really good too.
