The Dutch is a New Yorker staple, I’d recommend that.
Out of interest why does it have to be Soho?
If you don’t mind going slightly east to Nolita I’d recommend Beaty and Essex or Vandle or the dirty french .
Actually, way too many to list , if you can download an ap get ‘urban daddy’ you can then narrow down exactly what you want

i wouldn’t limit yourself to soho at all, pretty much anywhere in Manhattan can be accessed in 30minutrs
If your on your own and want something casual then johns pizza on bleecker street followed by a few beers in local bars, despite the New York reputation I find the people very friendly.
Enjoy the one night, don’t limit yourself to soho though, as nice as it is

I never went but the queues to get into Katz's Deli on Houston stretched a block, so I guess it's good. https://katzsdelicatessen.com/
I wouldn't venture into Chinatown. It gets significantly more grubby down there, but Little Italy is nice and some great restaurants. NY Italian food is more 'American' than you get here, so you can have something quite unlike you'd get in London. Or Italy.
Head north of Houston to Buenos Aires on East 6th St for steak. It's supposedly the Pope's favourite NYC restaurant! https://www.buenosairesnyc.com/
Afterwards, If you fancy some serious grown up cocktails the Death & Co is both hard to beat and hard to get into. An English accent and an international phone number (so they don't want to text you) is very effective at skipping the queue. https://www.deathandcompany.com/

For something unusual I would suggest sinking some light, or dark, beers at mcsorleys, then go for some ramen at ipoddu , followed by desert at Elieens cheesecakes for the best cheesecake in Manhattan, or chickilicous for a desert only restaurant . Finish the night off at please don’t tell or some other speakeasy for a great strong cocktail
