Ryanair Flight Change Question

Have had flights to Pisa booked for July since before the lockdown but for various reasons (2 of my kids 18+ will not be vaccinated, don't want to go not knowing if all shops, cafes etc will be open etc..) we want to change the flights to early next year to a different destination.

Problem is those flights are not yet released on the website and probably won't be until after the original departure date (14th July).
Ryanair normally release flights 5-6 months before departure.

How do we make sure we don't lose the ability to amend the flights to next year?

Have tried using chatbot on the website and searching various websites etc.. but no luck.

Any ideas?
