Given the choices of "North" and "South", where would you put it then? It might be geographically 20-odd miles closer to the closest point on the South coast than it is to the closest point on the Scottish border, but in all other methods of assessment it's surely more North than South?

No. The Tees/Exe line is a geographical line which more or less marks the distinction between highland and lowland UK or something of that ilk. It has nothing to do with this thread. I just couldn't find a picture showing the Severn/Wash line on its own, and couldn't be arsed to make one.The Severn/Wash line is more often used as an indicator of North/South divide, hence the positioning of Watford Gap on the map.
