Porsche are pretty hot on logging stuff from the ECU. Warranty rejections happen with stock cars if they're overrevved too much, let alone modified ones.
I don't imagine it's beyond them to either outright detect remaps (ala VW group with TD1 flag) or note that various engine settings are outside spec and in such circumstances where a customer would never have been able to do this, and everything a tech ever does gets uploaded to/validated with Porsche servers - I'd say the chances of getting away with it are slim.

They can and often do pick up on remaps, or by Porsche definition "ECU tampering" - it shows as a non-zero field in a VAL report. Other than warranty, any future trade-in and resale value will be affected. An OPC will not resell the car and at best will put it straight to auction, and for resale it will narrow the market more than most other marques.
I can see the temptation though..
