I would buy a large piece of land, hundreds if not thousands of acres of farmland and woodland, with various barns and sheds dotted about. I would then retain somebody like Simon Kidston to go out and find me some of the finest collectible cars, Ferrari GTO and McLaren F1 sort of thing. When he finds them and buys them, with my money that he already has so that I don't know when he makes a purchase, he will have them parked in random corners of random sheds on my property without telling me. I would probably make these arrangements while very drunk, to increase the probability of me forgetting about it This way I can at some point in the future make the most amazing barn finds in history.

I just thought.. I'd get a steam powered lawnmower.

If one doesn't exist, I'd pay someone to make it for me.

Actually, thinking about it, I'd end up starting the British equivalent of Aperture Science.

It would start with a steam lawnmower, and get much, much worse.

Digital cameras, electric go-karts, robot operating systems... there is so much science to be done.
