I'd take out the heated seats as it's Alcantara not leather, i.e. not too cold in the winter and the engine is right behind you. Boxter or leather I'd leave them in. Otherwise parking sensors, light design, fuel tank, rear wiper, folding mirrors and maybe the 20"s if you ever want to change to n-rated Michelin PS4s
For me, I think I'd go with the options that provide the most cosmetic impact - bigger wheels, sports tailpipes, colour and possibly PDSL. I'd avoid the special colours as they are too much, but would juggle the others. The only interior options I'd go for in that price range are smoking package, parking sensors and heated seats.

Maybe I'm missing something, but I don't see the appeal of the sports tailpipes. I have them on my 981 and they add nothing aurally or visually to me. Although I might swap the exhaust pipes for auto climate. I would obviously prefer both.
