Audi S3 8P Won’t Stay at 90 (oil temp) HELP

Hi all,
I have recently got an Audi S3 8P 2007. First thing I noticed is that when idling it reaches 90degrees both gauge and digital reading. When driving it drops to 70-80 on the gauge and reads 77-84 on the digital dash.
First thoughts - thermostat! Had this changed and the issue still persisted. Had it changed again to be sure, tested the thermostat it works. But no the same issue is occurring.
I let the car get hot idling then took it out and it seemed ok. Cooled a tad (65) then went back out and can’t get it above 80.
I am stuck.
Any ideas?

Are you sure you are talking oil and not coolant temp? Oil temp shouldn’t be dipping as low as 65c once up and running to temp, even if you are overcooling the engine with a stuck open thermostat.
Does it still do it with the heater and A/C switched off?
Is it holding coolant pressure ok? I’ve had issues in the past with seeping cooling systems not holding pressure and thus not holding coolant temp.
