Haven't seen those videos in a while, they're cracking!
Assuming the cars were being pedalled at a similar level (it looks like it in general) it just shows how little on-paper figures tell you about real-world (or racetrack) performance.
Oh and I would so love a Seven, my dad's old one had just over half the power of that R500 and that was a damned quick car!

Still too scared to do the ring in a 911. The 944 is fine for the first hundred laps I reckon.

The main difference could be that the R500 does not have any driver aids, other than perhaps a limited slip diff. Earlier Porsches which did not have driver aids, were very similar to the r500 in their propensity for firing their drivers at the scenery. Not driven a R500 but have driven an R300 and it's so predictable. Amazing car.
