I have one of these.

Forget the range but otherwise fits the bill perfectly.

Yup, an XK8 would be my choice for the OP.

The V8 sounds great

Hugely appealing but don't these cars have an awful reputation for being unreliable?
They only breakdown if theyre not lookd after like any other car, ive owned mine for nearly one year and have fitted new brakes as it needed them, new exhaust and two new cats, nothing more than any other 20 year old car would need really. Its fantastic to drive and has great presence.

That doesn't mean those cars are better, it's what people can afford and suits their needs on a daily basis.

Money no object, a thumping V12 is better than a small diesel when doing a long cruise.

Not sure on the range, but I'll be the first to nominate the TVR Cerbera.
When he said 5-600 mile range I thought he meant fuel range not range between breakdowns.

I highly recommend the Merc AMG GT-S. Despite the horrible dashboard it is awesome. Huge boot, decent tech, comfortable seats and great exhaust burble / fart.

GT cars are my favourite type.

For me:

It needs to be as quiet at the ton and vocal when pushed.

For an ICE, Eight cylinder minimum and petrol.

Electric/Hybrid is also a viable option.

90-120mph without fuss

Two armchairs, leather

Long wheelbase.

Being a traditionalist with the type, I would choose:

Aston Martin DBS
Ferrari 612 Scagletti
Mercedes CL600

Leftfield, but completely viable:
Tesla P90D+

To answer the OP's question, the greatest ever is:

It's got everything for me.

To me a GT is something I would pick up the keys for, from the collection of cars sat in my garage of course, to pop down to Lake Como in.

There are a few that would tick the box.

Mercedes S63 Coupe.
Masser GT.
Ferrari FF.
Panamera Turbo.
Jaguar XK-R.

I would be more than happy to do that run in any of those.

They also come with a fine auto box. I believe it suits the car better too.

I think the Mercedes SL - let's say the 500 R231 is a good example of a GT car.

Or as others said either an Aston DB9 or a Jaguar XKR.

Probably the Aston.

I was looking for a picture of this

which I thought was a good answer when I found this

Rolls Royce Cullinen, available 2018 apparently. I think I'd be quite happy to do a Grand Tour in 1.

Got to be something like a 550/575? or BCGT or Continental T etc....

If we're talking a modern car barring the BCGT if I had a choice of car to waft down to the Cote d'Azur, I'd probably choose a Wraith/Dawn.

I love the idea of doing that. In reality I am convinced that is super niche unfortunately as most people who are wealthy enough to buy cars like those listed are busy as hell and wont want to waste days of precious holiday time driving when you can fly there in a couple of hours. The other variable is having a significant other who would prefer to spend all that extra time in the passenger seat as opposed to shopping/sunning/tourism etc!

They aren't that expensive, you don't need to work 24/7 to buy one. Plenty of time to time left to enjoy the driving experience.
