Two that spring to mind for me are the C63 6.2 V8 and R35 GTR, and I would love to experience both those with a three pedal Manual gearbox.

What's your choices?

The Ferrari 458 is a great shout, I think you can get the normal F-Type V6 with a manual...and it's a shame the V8 model isn't offered with one too.

Most of them! To name a few; the current Clio RS, A45AMG, Giulia Cloverleaf (or whatever it's called), previous-shape Fabia vRS...

Yes and the current Clio RS going Auto didn't go down that well...with pretty much everybody.

Most large GT's. I know there would be no market these days for them but I really like the idea of comfort, a large V8 or V12, and a manual 'box.

Something like CL500.

I’m pretty sure there’s a really interesting engine in the family bus that’s hidden behind a slush-o-magic.
I’d very much like to leave it in 3rd at 30mph and pin it wide open all the way to the redline.
Just occasionally when pressing on it reveals that under the urbane well fitted suit and cultured manners, it’s really a thug.

Literally all of them. I cannot think of a single car that I would not like the option of a manual gearbox on.

The E46 CSL is certainly a car in desperate need of a three pedal manual...from what I've read about it's SMG gearbox.

Smart car (older models) - ruined by its shonky dim witted gearchange
BMW 335d -nothing special but having owned a 330d manual it was a very nice thing to drive, a 335d manual would be good.

Something like CL500.
This is one of the reasons why I absolutely love the V12 Vantage, and the fact it came with three pedals.

why are people so obsessed in there being a knob to fiddle with in a car they have never even driven?

The SMG is fine really, but don't dispute a manual would be nice.

Wonder if anyone converted a CSL to manual on that note? At one point you could pick them up for low £20s.
