Well, according to Ben Collins' book (he's a Stig, if you didn't realise that either!), the Veyron race was for real, although obvious written so that they would finish as close as possible. Once the race was finished he drove the car back to Milan, filming the various locations on the way.

There's a long blog post somewhere from Andy Wilman, the producer, who says that on the various adventures they do there's very little advance scripting (or even preparation) - literally they arrive with a couple of pages.
He puts the way it looks scripted down to the cast playing their parts as if they're cartoon characters, so it all looks and sounds very familiar to the viewers.

Its not the fact that its scripted that bothers me. Its how badly scripted it is. It's so obvious and predictable that it becomes very unfunny. I havent bothered watching the last series and the current christmas specials, and i never thought i would say that! TG used to be the one program that i had to watch every week. 
I still watch it, but get dissapointed by it most times. The christmas special was good though.Of course it's scripted. 90% of TV is. There's nothing WRONG with that. But they over egg it too much and it dumbs it down to the lowest denominator. And that's not fun to anyone. And before some t
tto pipes up, no we don't want bore vs stroke measurements. They just need to make it seem as natural as possible.

And anyone who doesn't realise that virtually all telly is done like that shouldn't be allowed out. Examples :
- When TG treated the Transit to 'a day' at the Nurburgring to attempt a 10 minute lap, an engineering contact at Ford later confirmed that they were there for several days. Oh yes - and Ford had already spent several days before hand, deciding what engine, transmission and axle ratio would give the best results.
- Then there was the infamous Veyron - vs - light plane to London 'in a day' episode.
