Jaguar XK8 / XKR 1996-2005. Good ones seem to hold their value well. And when I say good ones, I mean ones that aren't slowly rusting away to nothing.
You'll find a lot of cheap ones on Autotrader but you can more or less guarantee they are hiding a lot of rust underneath pretty bodywork.

Have you considered a modern 'classic'? residuals seem pretty solid on some of these now

For me, i would be tempted with the E30 - this 325 looks nice but is strong money - as a weekend/occasional car i can't see many modern options not depreciating. Of course, who knows if/when the classic car bubble will pop again - enjoy the hunt though
