Which one will hold it's value best long term?

As far as I can tell on HowManyLeft there are about 700 Gallardos registered in the UK (Taxed + SORN) and 900 McLaren 570s, so numbers are pretty similar.
Generally if comparing a 12 year old car with a 7 year old car, the older car will hold its value better as it's further through its depreciation curve.
Counting against the Gallardo, the Huracan may have a more negative influence on its desirability than the Artura does on the 570, because in the former case it's an improved version of the same V10 powertrain, whereas the Artura's is downsized and hybridised. Also the McLaren has "supercar doors", and generally had a better critical reception when new as a drivers' car.
On the other hand, Lamborghini is a stronger brand, and people are concerned about buying McLarens because they have a reputation for combining British Leyland build quality with Bugatti parts prices. (Things aren't quite that bad and there are a couple of half-decent independents which are making a big dent in running costs, but it's the perception that drives prices).
So as a purely financial transaction, I'd probably back the Lambo.
