Due to popular* demand* - I've stuck the latest video up tonight! The repair was a little bit more drawn out, as I'd feared. Replacing the steering angle sensor made absolutely no difference, and it turned out the fault lay with the control circuitry in the pump. The old pump still works perfectly (and looked to be in better overall condition than the one I replaced it with) but the circuit for the steering angle sensor was defective, resulting in no reading being recognised and the system going into fail-safe mode.
Fitting the new* (very used, £23 from a scrapyard) pump was a bit of a pain, because I didn't have proper flare spanners or hose clip pliers. The hoses and especially the return hose were rather difficult to access.
The used part came with it's entire mounting bracket attached - I originally thought that I'd need to remove the old one in the same way this one had obviously been extracted from the scrap car - this would've been difficult and time consuming. Turns out there are three (tight and rusty) bolts on the bottom of the pump assembly that allow it to drop out from where it's mounted, in a far simpler manner.
It's now got fully functioning power steering and no more warning on the dash. £53 in parts (plus £8 for some CHF11S fluid) but it could've been sorted with the pump alone, I think.
