McLaren 570 Coupe, the spider's not in your budget yet or look for a 650S or possibly a spider at mid to high eighties.
Nothing else in your list is on the same planet for the use you intend and by using the Mac on a frequent basis should eliminate or reduce the niggles. Plenty of reliable cars out there, I've done over 6k since January in my 600LT without one issue of any significance. Just be aware of running costs such as warranty but if you're near to Thorney then use them for their cheaper costs although that in no way lessens their ability.

1. 650S McLaren, I have done 2 x 3k miles euro tours in my old 12C and they are perfect, loads of luggage space, 30+ mpg on the boring bits, no issues and loads of fun in the twisties. I would get a coupe as there is more luggage space on the rear shelf (and they look better). I wasn't a fan of my 12C on track, was a great road and trip car, one of the finest ever, but on track I never gelled with it.
2. Porsche 981 Spyder, I know you don't want a Porsche but also done a 3k Euro tour in mine and it was lots of fun. great daily car to lots of luggage space and they are very good on track.
3. I also have an Exige 430 CUP. I would do a solo Euro Trip in it but not with my wife. If solo would be my car of choice in that price range as nothing will give you as much fun for the money. If you are 2 up then your passenger needs to be a petrol head and you need to like them! Will be the most fun on track too and plenty comfy on the road. The 430CUP differs to the 981 Spyder as you get out of it what you put into it. The Porsche is much more forgiving and in some respects it will sort out any driving errors. Because of this I find the Exige much more of a challenge and much more engaging, the Porsche you can drive around a track from memory like a metronome and that's a bit dull after a while even if consistent. Every lap will be different in the Exige.
The other cars on your list don't interest me and I can't comment as not driven them but as your name suggests why not try a Sagaris?

The 570s feels a little more agile and responsive below 40/50 mph. The 650s is quicker and much more of an experience above those speeds. The effect of this is the 570s feels more alert on a short test drive but after a longer period the 650s is the car I would choose. I prefer the looks of the 650s too but appreciate that's subjective.
As an aside I lost much more money on the 981 Spyder than I did on the 12C! The Exige appreciated. If those things are a factor.
I go through the same process every year for a touring car at around the same price. However I think for my next tour I want to revisit an old friend and I am considering a 996 Turbo for 1/3rd of the cost, just because they are great touring cars!
