I've just realised that moving the auto gear lever to the left puts the car in sport mode whilst automatically shifting gear and only reverts to manual once you knock if forwards/backwards. I originally thought moving it to the left just enabled manual mode only. Is there any difference to selecting sport on the Sport/Eco Pro button rather than using the gear shifter? I've looked in the manual but it doesn't really help with this query.

Sport on the button puts the throttle/steering/suspension (if fitted) into sport

Knocking the gearstick across just puts the gearbox into sport. I normally do that to allow a quick kickdown and Rev holding for overtaking.

Pulling a paddle in gearbox sport (or knocking up/down) puts the car into permanent manual mode rather than temporary

Yup, that is pretty much it.
Knock left for sport. This then drops a gear or two, and gives upchanges at higher revs. Once the gear stick is moved forward or back, OR the paddles are used you are in permanent manual (however, if you come quickly to a halt the box will change down a speed commensurate with moving away).
If you are in D (with stick to the right) then paddles can be used, but this will only be a temporary manual until the car senses it is logical to place itself back in auto. That works well.
I use the ‘knock left’ move for a swift overtake.

There are a lot of options with the ZF8 sport/auto, and it is worth playing with it to find out what it can do.

One tip for crawling traffic is to knock left and use paddles, then you can use engine braking to temper the weariness of the traffic, using paddles to hold in 1 or 2.

Thanks for the additional info. I haven't got the paddles, I went for the pauper spec! Had a long run over the weekend and tried the methods mentioned in the thread, got it sussed now, ta.
