Computer monitor issues and incorrect resolutions

Had an issue a while back with our second monitor not being recognised on two of our pc's. On restarting the pc's the second monitor came on.
Following on from that, not only is the second monitor no longer being recognised as a dual screen set up and the resolution has changed to something crappy like 1024x768 (should be 1900 x whateveritis) Both monitors are on, showing the same thing.
I've tried updating the drivers but it's saying we have the most up to date drivers. I've done Windows updates and uninstalled Windows updates. I've unistalled the graphics in the Device Manager (and put it back) The Rollback drivers box isn't available to click on. I've done everything I can think of.
The strange thing is that both computers have 1 Dell monitor and one other brand monitor. I need to swap them about to see if with no Dell monitors it will work. I also have a fairly old Dell laptop at home that did the same thing with it's screen - resolution went low down on the laptop screen but I managed to sort somehow and can't remember exactly how.
My main work PC is fine (no Dell monitors) and my home PC is fine, again no Dell monitors. It might not be Dell related but it does seem strange.
Hopefully I've explained it OK?
Apart from swapping the screens about to see if it works, does anyone else know what else it might be? I've pretty much uninstalled and reinstalled whatever I can.
