As far as I know you can SORN up to 31 Aug and have the vehicle tax start on 1 Sep.

I took delivery and drove away my current car on 31 July possibly because the dealer was keen to hit a target and I complained that I would be paying a whole month vehicle tax for just 1 day of ownership. The dealer taxed the car from 31 July possibly paying for 1 extra day and my vehicle tax renewal always falls on 01 Aug as if I had registered the car in the month of August. How did the dealer achieve this?

Was it a new car?You could potentially SORN it, although for 3 days, two of which being the weekend, you'd be as good off simply taxing it on September 1st.
Worst case you'll only get a reminder letter to ensure it's taxed and if you ignore it (like I foolishly did!) they eventually send you a b*llocking and backdate your tax and make you pay £40! That's after 3 months. So for the sake of 3 days, just tax it on the 1st as it won't even hit their radar.

Rereading the OP, is this a brand new car? If so, and given the 75 plate is coming out, I can't quite understand why you'd not align date of first registration to 1st Sept.
If its a secondhand car, I believe in the case of a new registered keeper, and if a car is neither SORNed nor taxed at the same time as the change of registered keeper, and if its not used on the road (ie you're not caught using it on the road....) there is actually a grace window of about 6 weeks during which they won't take action. It may be shorter these days, but there's definitely a grace and its definitely more than 5 days or so, meaning you'd be into September easily by then.
