You are allowed to have show plates on the car in certain places (not sure exactly where), but does it mean that you can put them on when parked in a private car park patrolled by those private parking companies?

If the car's somewhere the RTA applies - simplistically, anywhere the public have expectation of access - then it's gotta be road legal. Which means "proper" plates.

As car shows are in public areas, it basically means that show plates are never legal then?

Go somewhere like the NEC or excel and the expectation of access will apply to the car park but not the show arena. Hence your car will have be road legal in the car park, but can be any crazy shape you like in the arena.
