Is this possible?

I ask because:

i) Car's value is enough that I need protection against theft (even though garaged)
ii) The car won't be used for 6-9 months
iii) I don't really want to pay a premium for insurance that covers for me hitting the back of a 458, when all I want is protection against it being stolen from my garage

Any ideas?

Yes.

A SORN-ed car can still be used on the road in limited circumstances, there is nothing to prevent you from insuring it.

I've had a car that's quite often been SORN insured continuously for years.

You need a specialist broker, but you can get laid-up cover for projects.

you want fire and theft only insurance
very cheap usually, especially for a garaged car

"laid up" insurance is the magic phrase, in my experience - available from most of the specialist brokers who deal with classics and kits amongst others.
