As far as I was aware, GATSO's only flash for people on the other side when they're in dummy mode.

Either way - I was driving at a steady 30mph through a GATSO on a 30mph road, when a chap in a VW Passat heading in the other direction decided to fly through the camera at perhaps 50 - 60 mph. Camera flashed, and I was in the middle of it all. I'm half expecting to see a letter on my doorstep over the next few weeks accusing me of speeding. Obviously the photographic evidence will prove otherwise, so I'm not concerned about that.

My question is - what are the chances of the camera being stupid enough to believe it was me doing silly speeds?

Chill out. You've been listening to too many people down the pub.
Gatsos don't necessarily flash the opposite side when they are in "dummy" mode. The reason there are usually road markings (but not always) is so that it is possible to check which vehicle caused the flash (or indeed if more than one was speeding - what their speeds were) Cameras aren't stupid (although some of their locations are) Gatsos are not authorised to operate on vehicles travelling towards them.

As you rightly state, the photographic evidence will prove your innocence. Case closed.
