Long story short:

Doing my A license. Been offered a great deal on a bike. Just wondering if I can insure it whilst technically not being lawfully allowed to ride it?

If not no worries there will always be other bikes.

You should be able to get theft only cover, and then upgrade once you have passed your test.

Factoid: insurance costs TREBLE if you cannot spell licence. Harsh, but fair.

Yes just ask for “laid up” cover. Adrian Flux covered my car whilst it wasn’t being used so perhaps start there.

How long do you think you will be insuring it? I got some quotes last year, could only find 12 month laid up policies with no real option to cancel. It was also only £150 ish cheaper than the full riding policy I went with.

Because the OP is asking if insurance companies will insure that scenario. It's a valid question.
