Speeding on foreign licence

I was pulled for speeding at the weekend, given the formal warning at the time, I showed my UK licence, and the officer will be sending off the paperwork to presumably end up some weeks down the line with a fine and points.
I no longer live primarily in the UK, and this week exchanged my UK licence for one from my European home, so don’t have the UK licence card any longer.
What’s the legal situation here? I’m happy to send my new licence in if and when it’s requested, but no longer have a UK one.
I do maintain a home in the UK, but work and am paid on the continent, so will be bake to get any correspondence sent to the address that the (UK) car is registered at.
And in case anyone is wondering, the explanation (not excuse) is that I put my foot down a bit on a dual-carriageway to get home a bit quicker as my toddler was having a major poo incident that was leaking out all over the perforated seats of my new SL63.

If you surrendered your UK licence, and intend to return to UK and need the UK one in the future report it lost to dvla and get a duplicate, I can assure you the foreign company won't return it in 5 years or so time. I've got 2 old copies looked up in foreign license dept for that reason, sorry can't find it.
You can keep a uk license current, regardless if residentcy provided you give dvla an address you can be contacted at in uk, if you can't your UK license can't be used, (I'm in that position as no UK family so can't give an adress).
If you don't have a UK license they can create a dummy one, never happened to me if stopped, for speeding they just go spare on the side of the road, and let you off, it's to much hassle, camera notices are different they will create a dummy.
The police will tell you you must have a UK license if a British citizen, you don't, in fact some countries (Norway) it is illegal for a resident to hold any other license but a Norwegian one.
Of course if you get stopped for something serious they will create a dummy, and in theory if you don't have a contact address they can hold you. I've only ever been stopped for 80 on a motor way, and been let of with a telling off.
