Our local constabulary won’t accept any footage unless it’s a minimum of a minute. They prefer front and rear channel footage. Audio is even better. If it’s one channel e.g. front, then they want even more! It has to be really clear what’s happening too. They don’t have time to investigate lengthy stories of he said she said. So, if you do get a call then ask how long the footage is. You can also apply to the local authority for their grainy footage if the road was covered by CCTV. In conclusion it’s hard to tell what will happen here but I’m leaning toward nothing. Worst case I’d imagine a warning.
So you lean on the horn because the person in front of you brakes hard, then overtake them as they’re getting back up to speed, cut in in front of them and brake test them.
I’m not saying that’s what you did - just pointing out that there are different perspectives in every situation.

Why would you use your horn in a situation like that? What value did it add other than venting your frustration (which isn't what the horn is for)?If he was accelerating "to make it hard to pass" to the extent that you had to put the brakes on when you pulled in, why didn't you just slow down and pull in behind the guy? Why would you want someone like that behind you?
Dash cam channels are full of angry, impatient people making minor incidents much worse than they need to be. Rather than allowing yourself to get annoyed with him why not just think "what a nice guy - he just saved the lives of a couple of pigeons" and get on with your day - or if you can't think that just shrug, sigh, and wait for him to get out of your way. Much less stressful for everyone. Driving around trying to "teach people a lesson" is destined to fail - the "other guy" won't learn anything as he thinks that you are the knob, not him.

Someone slammed their brakes on in front of us last week - Empty road, no apparent reason.. Mrs nearly went into the back of them. Leant on the horn to pass on clear message, that is was not OK for them to do that.

The key word here is "apparent". I very much doubt they braked hard for nothing, they braked hard for something you and your wife didn't see. Or perhaps they thought they saw someone out of the corner of their eye about to run out, but it turned out to be a trick of the light. Whatever the reason, I bet there was a reason. The police have (hopefully) got far better things to do than worry about 2 idiots having a red mist session in the middle of nowhere.
Quick tip, disconnect the horn, it is the most pointless 'feature' of a car and has absolutely no conceivable use whatsoever.
(just remember to re-connect it for the MOT)
I got on the brake fairly heavily the other day to avoid a squirrel. Not solely for the sake of the squirrel, I don’t much fancy spending an hour cleaning mangled squirrel off the front of my car.
If someone behind had leant on their horn I would have considered them a little bit of a w anchor too. Albeit left them to it had they decided they wanted to then go around.
On the bright side OP you had left enough room so didn’t hit them and have a accident going against you too.
